Ingredients:
- 10 to 12 mini orange sweet peppers
- 1 bunch of dill fronds
- 4 ounces of cream cheese
- 3 tablespoons of sour cream
- 1 chopped scallion
- 1 tablespoon of fresh chopped dill
- A pinch of salt
Directions:
First, slice the peppers in half lengthwise so they can lay flat, and remove the stems and seeds.
Next, add the cream cheese, sour cream, and chopped scallions to a bowl. Blend the ingredients together until smooth.
Then, spoon the mixture into the peppers. Insert the dill fronds into the tops of the peppers to make them look like carrots.
And this last part is optional but try topping the peppers with everything bagel seasoning. You could even throw some chopped bacon into the cream cheese filling to lure young picky eaters to the table.
