Chop up the chives into small pieces and add them to a bowl filled with sour cream. Mix well!
Once it’s time, remove the potatoes from the oven and cut a V-shaped opening into each one. Let them cool down slightly before loading on the ingredients. You don’t want the sour cream to melt and turn to liquid, leaving you with a soggy mess.
Finally, spoon the sour cream mixture on top of the potatoes and stick a piece of bacon into the slits. Sprinkle fresh chives on top for the last step. You can also add a bit of shredded cheese if you’d like.
Serve them alongside any meal, whether it’s grilled salmon, stuffed peppers, or pork chops!
