Nothing is worse than having to pry your delicious confection out of the pan and ruining its appearance in the process.
Pop the lava cakes in the oven until the edges are firm. You want the center to stay soft and jiggly so that the liquid “lava” doesn’t overbake.
After removing the cakes from the oven, let them cool for a bit before extracting them from the ramekins. To do so, place a plate on top of the ramekin and flip it over. Tap the dish, and the cake should come out easily.
Cut the cake and watch the warm, gooey chocolate spill out onto the plate!
