After frying the almonds, add a head of cauliflower to the onions. Then, pour in some water or soup stock, which will make the texture of the soup super silky.
Cover the pot with a lid and gently stew the cauliflower in the liquid. Next, add the rest of the liquid, cover the pot, and let it cook for twenty more minutes.
Blend the mixture in a blender until the soup is smooth. Allow it to rest for twenty minutes so it can thicken slightly.
Finally, spoon the cauliflower soup into shallow bowls, and garnish with almonds, a drizzle of olive oil, cracked black pepper, and fresh thyme. A dusting of some parmesan cheese also works wonders!
