Ham and lamb always get the spotlight, but side dishes deserve attention, too. Without them, your Easter feast would just be incomplete. The truth is that the side dishes are really what keep guests coming back for more.
After all, it’s impossible to fully appreciate the flavors of the meats if they’re not complemented by an array of veggies.
Seasonal vegetables, like carrots, add a pop of color to the table, inviting you, your loved ones, and even the Easter bunny for seconds.
So, check out this recipe for crispy Parmesan-crusted carrots by TikToker Ayeh (@cookingwithayeh) to pull together a classic holiday meal.
To start, prepare the carrots by washing and peeling them. Try to use carrots that are all of a similar length.
It will make the process of cutting them and layering them into your dish so much easier. Afterward, cut them in half and then slice them in half again, but this time lengthwise.
In a big bowl, add olive oil, grated garlic, and parsley, along with paprika, cumin, chili, and salt to make the marinade.
Next, throw in the carrots and mix well so that they’re thoroughly coated with the marinade. Grate a block of Parmesan cheese until you have a large pile of it.
Sprinkle the freshly grated Parmesan cheese into a non-stick, oven-safe dish or on a lined baking tray.

Then, dip the flat side of the carrots in the remaining cheese. Place them with the flat side facing down onto your baking sheet. Make sure to arrange them in a single layer and that there aren’t any gaps between them.
Finally, bake the carrots in the oven at 400 degrees Fahrenheit for 20 to 25 minutes. When they’re ready, remove the tray of carrots from the oven.
Flip them with a spatula right away to reveal the beautiful golden Parmesan cheese crust on the bottom.
The carrots should be immediately flipped while they’re still warm because once they have cooled down, the cheese will harden and stick to the dish.
In the comments section, many TikTok users offered some alternative flavor combinations to try for the recipe.
“[The] only thing to make these carrots better is to add a layer of minced meat and more cheese on top, maybe add some potato slices somewhere in between,” suggested one user.
“To make them sweeter, add brown sugar and honey to your marinade and zest of a lemon, then [Parmesan] and bake,” wrote another.
