I’ve been a fan of MaKayla Thomas (@makayla_thomas_fit on TikTok) for years, because she has such a wide variety of exciting, interesting, and super simple recipes.
Not to mention, she’s incredibly inspiring because she lost 55 pounds postpartum, and she says her family is really picky, but they adore the things she whips up in the kitchen.
One of my new favorite finds from her is this recipe for healthy queso chicken tacos that you can make right in your crockpot, meaning it doesn’t get any easier than that! How can you not love a one-pot cooking and cleanup situation?
These tacos are not only low in calories, but they’re high in protein, too. Here’s how you can make them for dinner tonight, below.
Ingredients:
- 6 to 8 chicken tenderloins
- 1/2 a packet of fajita seasoning
- 1 cup of your favorite salsa (MaKayla uses Herdez Salsa Verde, and that’s my go-to)
- 1 block of light cream cheese
- snack-size low-calorie tortillas
- shredded quesadilla cheese
- Herdez Taquria Street Sauce
Instructions:
1. Grab your crockpot, and place the chicken tenderloins, fajita seasoning, salsa, and cream cheese inside. You can cook everything together on high for 3 or 4 hours, or you can opt to do it on low for 4 to 6 hours.
2. When it’s done cooking, shred the chicken in the crockpot with a fork, and mix it well. Then, grab your low-calorie tortillas, lay them out on a cutting board, and fill half of them with the queso chicken.

3. Top with Herdez Taquria Street Sauce and shredded quesadilla cheese before folding your tacos over. There’s enough filling to make 8 to 10 small tacos. If you want to make more, you can double the recipe (I did this and served them at a party over the weekend, and it worked like a charm).

How To Make MaKayla’s Clever Dipping Sauce:
MaKayla even has a neat sauce to pair with these tacos, and it only requires two ingredients to pull it together: Chick-fil-A’s Avocado Lime Ranch ( you can easily find this at Target, Walmart, or order it on Amazon), thinned out with a splash of pickle juice. But if you’re not a pickle lover, you can also use water, milk, or lime.
Side note: you can make these tacos as a meal prep and just get them crispy again by tossing them in the air fryer.
