3 Delicious Tomato Recipes To Help You Use Up Your Summer Harvest

I’m no gardener, but my mom sure is. For as long as I can remember, she’s been enthusiastically growing tomatoes.
One of my favorite childhood memories is playing underneath her tomato plants with my sisters and pretending we were crawling through a jungle. I mean, my mom really knows how to grow these bad boys, and times have not changed.
To this day, she grows so many tomatoes that she’s not really sure what to do with all of them aside from giving them away to her friends and family.
If you’re anything like her and you have a bountiful summer harvest of tomatoes to use up, here are some delicious recipes to help you out!
Spicy, Creamy, Garlicky Cherry Tomato Pasta
This pasta recipe is spicy, creamy, garlicky, and packed with tomatoes, too. This dish is courtesy of TikToker @car_biegirl, and it’s one of my new favorite things to make. Oh, and it will only take you 20 minutes to whip up.
Ingredients:
- 1 Entire head of garlic, peeled
- 1 Pint of cherry tomatoes
- 1 Cup of heavy cream
- 2 or 3 Tablespoons of Calabrian chili (if you would like your pasta to be less spicy, put less in)
- Salt
- Black pepper
- Dried oregano
- Olive oil
- 1 Box of your favorite pasta
- Parmesan, grated, to add on top
Instructions:

TikTok – @natsnourishments and @car_biegirl
First, begin cooking your pasta. Next, grab a large pan, put it over medium heat, and generously coat the bottom with some olive oil.
Throw in all of your garlic cloves and cook them for several minutes, until they are fragrant. Then, add in your tomatoes, a pinch of salt, and a sprinkle of oregano.
Cook this together until the liquid is thickening up and the tomatoes begin to blister. Take a wooden spoon and smash your tomatoes up.
Continue simmering with the Calabrian chili added. To finish your dish, add in your cream and boil it on low heat for a bit more time.
A couple of minutes before you’re done, drain your pasta, reserve some of the water, and add that to your sauce, along with some Parmesan. Cook for an additional two or three minutes on low, and stir until the sauce is thick.

Restaurant Style Salsa
TikToker @ale.reeg has an amazing recipe for restaurant-style salsa, which is a great way to make use of tomatoes from your garden.
She says you can absolutely add more heat to this if you like, but she made this for her son’s school and kept it on the less spicy side.
Ingredients:
- 50 Roma tomatoes
- 1 Serrano pepper
- 3 Garlic cloves
- 2 Bunches of Cilantro
- 1 Jalapeño pepper
- 1/2 A diced-up yellow onion
- 4 Green onions, sliced up
- Salt
- Tortilla chips
Instructions:
To begin, grab two cookie sheets, line them with tin foil, and add your tomatoes to both pans, along with the garlic cloves, Serrano pepper, and Jalapeño pepper.
Roast on medium-low heat in your oven for 10 minutes. Take the garlic out, and continue roasting everything else for a total of 20 minutes.
Blend up the garlic and peppers with a bit of water and salt while you wait for the tomatoes to cool down. Set this aside.
Grab a big bowl to begin creating your salsa, and add in the diced-up yellow onion. Next, get a food processor and add in the tomatoes, some of the cilantro, and some more salt. Pulse to make sure the salsa remains chunky. When you reach the desired texture, dump that out into your salsa bowl and repeat until all the tomatoes are finished.
Slowly add the blended peppers and garlic mixture to your tomato salsa, and keep checking to see if you need to add more pepper or salt.
Finally, add the green onions, mix well, and serve your end result with chips!
