For the sweet potatoes, peel, chop, toss with 2 tablespoons olive oil, salt and pepper, bake in the oven on a cooking sheet for 25 minutes at 425°. For the brussels sprouts, chopped the ends, halved, toss in 2 tablespoons olive oil, salt and pepper. Divide between bowls. For the chicken thighs, I trim the fat off with kitchen scissors, I usually use a different spice every time but made a rub this week. The rub is 3 tablespoons brown sugar, 1 teaspoon smoked paprika, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1/4 teaspoon ground ginger. Coat the chicken and add to bowls. I go ahead and add the bowls to the oven while sweet potatoes finish. I drop the temperature to 375° and bake for 25 minutes.
