Move Over Corned Beef And Cabbage, Because BBQ Beef In A Cabbage Is A Unique Dinner Idea For Saint Patrick’s Day This Year

If you’re not sure where to start with making an Irish meal, you can’t go wrong with corned beef and cabbage. But with this recipe, there is a twist.

Instead of simmering in one pot on the stovetop or in a slow cooker, this version of the classic Irish dish is made on the grill.

Barbecued corned beef that sits in a cabbage bowl is a slightly unusual concoction, but it sure makes for a cheap and filling meal–just as the Irish intended.

TikToker @rufusteaguebbq is showing you how to make your own luck on the grill for the upcoming St. Patrick’s Day with this Irish-inspired recipe.

Ingredients:

-1 green cabbage

-1/4 white onion

-4 tablespoons of butter

-3 teaspoons of Rufus Teague meat rub

-1 pound of corned beef

-1/2 cup of barbecue sauce

Directions:

Start by heating the grill to medium and cutting a cabbage in half, and hollowing out the insides. Make rings out of aluminum foil to support the base of the cabbage halves, so they sit level on the grill. Next, dice up an onion.

Melt some butter in a pan, then toss in the diced onions and the Rufus Teague meat rub. Cook it for five minutes. Next, dice the corned beef into small pieces–roughly a quarter inch–and place the meat in a bowl. Coat the cubed beef in barbecue sauce, tossing them, so they are thoroughly covered.

Spoon the onion and butter mixture over the cabbage halves and fill each half with the corned beef. Place the cabbages directly on top of the foil rings on the grill. Cook everything for about one to one and a half hours until the cabbage is soft. Finally, remove them from the heat and top the cabbages off with a light sprinkling of Irish cheddar cheese.

Go ahead and serve it up! And don’t forget to wash it down with a few festive St. Patrick’s Day drinks.
