First, you’ll need to prepare the salsa. Gather 25 toasted Chile de árbol, 14 tomatillos, two garlic cloves, cilantro, chicken bouillon, and tomato bouillon.
The Chile de árbol is a small Mexican chili pepper of a bright red color. If you can’t find them already toasted, you can toast them yourself.
Just be sure that they don’t burn while you’re toasting them because that will make your salsa taste bitter.
After toasting the peppers, wash the tomatillos. If you didn’t need to do any toasting, just go straight into handling the tomatillos.
Boil them in a pot of water. Remove them before they start to open up, as that will cause the salsa to taste bitter as well.

Next, throw the chili peppers into a blender and blend until they’ve been broken down into small pieces.
Then, add the boiled tomatillos, a small bunch of cilantro, two garlic cloves, one spoonful of chicken bouillon, one spoonful of tomato bouillon, and a half cup of water. Blend until you have achieved a smooth, runny texture.
For the heart-shaped tacos, start by cutting ranchera meat into thin slices. Then, use a heart-shaped cookie cutter to carve out hearts from the tortillas. Once that’s done, add the meat to a hot pan coated with some oil.
While the meat is cooking, season it with black pepper, tomato bouillon, garlic powder, and salt. Add a spoonful of mustard and sliced onions for extra flavor.
Additionally, squeeze the juice from half of a lime into the mix. Stir the ingredients together and continue cooking until the meat starts to get a little crispy.
Fry the tortillas in some olive oil and place small handfuls of mozzarella cheese on top. Once the cheese has melted, place the meat on top, along with a little more cheese.
As for assembling the tacos, start by placing them on a decorative board or serving tray. Add chopped cilantro and pickled onions on top. Finally, drizzle some salsa over everything.
Side note: if you don’t want your salsa to be too spicy, just cut the ingredients list in half to achieve a milder flavor.
