She’s Sharing Her Healthy Recipe For A Peruvian-Inspired, Lettuce-Free Salad That Will Last You All Week Long

Maty Harrington (@nutritiouslyeasy) is a nutritionist, and she’s sharing a healthy, well-balanced recipe on TikTok that she calls “the week-long salad,” which was inspired by a Peruvian chopped salad.

“When I first started eating healthy, this is the salad that I would always make because it literally lasts all week long,” said Maty.

Wait ’til you try this lettuce-free salad! It may come as a surprise to you, but sometimes, the best kind of salad is one that doesn’t contain any lettuce.

Since there is no lettuce in this salad, you can prepare a large batch of it to get you through the entire week. It won’t become soggy or wilted even if you let it sit in the refrigerator for a few days.

You can eat it on its own or devour it with some chips. The possibilities are endless because it pairs well with many other dishes!

The week-long salad is vibrant, crisp, and full of texture since it’s made with a variety of ingredients, including radishes, cucumbers, tomatoes, black olives, corn, lima beans, cilantro, and red onion.

Another pro about this recipe is its versatility. If you can’t find any lima beans, edamame can act as a substitute.

In addition, canned corn will work in a pinch. Not a fan of red onion? Skip that step!

Anyway, the key is to finely chop each vegetable. Once your chopped veggies are added to a large bowl, squeeze in the juice from half of a lemon.
