She’s Showing You How To Make A Classic Ice Cream Sandwich

One of my favorite parts of the summer is enjoying a tasty treat from an ice cream truck. It’s a way to please your inner child during these hot months, and if you’re busy working during the summer, a great way to reward yourself. 

TikTok food creator Alex George (@lilypcrumbs) has had viewers hooked on her Ice Cream Truck series, which includes videos on how to make some of her favorite old-school delights you can find in most ice cream trucks during the summer at home. 

She’s shown her followers how to make the perfect chipwich, strawberry shortcake bars, and ice cream sandwiches, a beloved classic. 

Who doesn’t love a good ice cream sandwich on a hot day? 

“There is nothing that I love more than an ice cream sandwich on the beach,” says Alex in the intro to her ice cream sandwich video.

Alex tested the recipe for her homemade ice cream sandwiches multiple times, dealing with a few recipe failures until she got a perfect result.

Thankfully, she shows us exactly how to get it right! Here’s how to make your own ice cream sandwiches at home. 

Ice Cream Sandwich Ingredients:

  • 2 1/2 ounces of all-purpose flour
  • 2 ounces Dutch process cocoa
  • 2 ounces room temperature unsalted butter
  • 3 ounces light brown sugar
  • 1/4 teaspoon Kosher salt
  • 1/14 teaspoon baking soda
  • 3 ounces boiling water
  • 1 pint of any brand’s vanilla ice cream

Before mixing the ingredients for your ice cream sandwiches, you’ll need to do some prep work. Start by preheating your oven to 350 degrees Fahrenheit.

Then you’ll want to line a large cookie sheet with parchment paper. You’ll be spreading the batter for the sandwiches into a 9×17 rectangle onto the parchment paper, so if you’d like to take a ruler and trace the rectangle onto the paper before baking, that would be helpful!

Next, combine the butter, sugar, baking soda, and salt in a stand or hand mixer bowl. Mix until light and fluffy, which should take around five minutes.

Around this time, you’ll want to take your ice cream out of the freezer and set it aside to melt to the perfect spreadable consistency.

Add your flour, cocoa, brown sugar, salt, and baking soda into your mixer and mix for about one minute.

The mixture will be very thick, so be sure to scrape the sides of the bowl. Next, while the mixer is still on, pour your boiling water into the bowl and mix until you’re left with a smooth batter.

Using a spatula, pour the batter onto your parchment-lined baking sheet and spread it into a 9×17 rectangle.

Bake for six minutes, then remove it from the oven to let it cool. The mixture should look puffed and slightly wet on the top.

Once cooled, cut your rectangle in half, and the two halves of your sandwich should fit in an 8×8 pan. 

Now it’s time to assemble the sandwiches! Line an 8×8 pan with parchment paper, making sure there is an excess overhang of paper so you can lift the bar out of the pan.

Place one of your 8×8 bars into the pan, followed by your pint of ice cream.

Spread the ice cream using a spatula until it reaches the edges of the bar. Then, place the other 8×8 bar on top of the ice cream, making one big ice cream sandwich.

Place your pan in the freezer for about four to five hours until the ice cream is frozen. When you’re ready to eat some ice cream sandwiches, remove the 8×8 rectangle from the pan and cut out individual sandwiches of your desired shape. Then enjoy some tasty, classic ice cream sandwiches!
