“Let me tell you how to make these buffalo chicken stuffed sweet potatoes, and you’re never going to want to have another dinner again,” she said before introducing the recipe.

Ingredients:

-3 large sweet potatoes

-Salt and pepper

-A pound of cooked chicken breast

-1/2 cup of buffalo sauce

-1 to 2 tablespoons of olive oil or ghee

-6 to 8 slices of cooked bacon

-1/2 cup of cooked broccoli

-3 to 4 green onions

-Buffalo sauce

Directions:

Start by making buffalo chicken. First, shred your seasoned chicken breast and place it in a small bowl, then combine it with buffalo sauce. Alternatively, a rotisserie chicken from the store will do the trick.

Next, bake your sweet potatoes in the oven at 400 degrees Fahrenheit until they’re fully cooked, which takes about an hour.

Cut them in half and add olive oil, salt, and pepper. To save time, cook the sweet potatoes in the microwave.

Then, stuff them with the buffalo chicken mixture. Take it to the next level by topping them off with some bacon bits, chopped broccoli, and green onions. It really elevates the flavor profile.

Finally, drizzle some extra buffalo sauce on top, and throw it back into the oven for a couple of minutes so it’ll be nice and warm.
