She’s Showing You How To Make A Classic Ice Cream Truck Style Chipwich Right At Home

If you don’t get to see an ice cream truck frequently where you live or want to try making some of your favorite ice cream treats from scratch, you’re in luck!

TikTok food content creator Alex George (@lilypcrumbs) is showing her viewers how to make classic ice cream truck treats at home in her ‘ice cream truck series.’ 

One of the most popular items sold at an ice cream truck is the classic chipwich. A chipwich is the best of both worlds, as you get to enjoy ice cream and chocolate chip cookies in one dessert!

In her ‘perfect chipwich’ video, Alex explains that a chipwich needs three things to be amazing. The first is mini chocolate chips, which she describes as the “upper echelon” of chocolate chips. 

The second element is using chocolate chip cookies that stay delicious even if they’re frozen, so she uses pastry chef Stella Parks’ cookie recipe, which she says needs “no changes.”

Then finally, an excellent chipwich needs good quality ice cream to go in the middle!

With Alex’s tips in mind and Stella’s clever cookie recipe, here is how you can make the perfect chipwich at home. 

Chipwich Ingredients:

  • 4 ounces softened, unsalted butter 
  • 4 1/2 ounces light brown sugar
  • 1/2 ounce malted milk powder
  • 1 teaspoon kosher salt
  • 3/4 teaspoon baking soda
  • 6 1/2 ounces all-purpose flour
  • 1/2 ounce vanilla extract
  • 4 ounces milk (any percentage)
  • 2 ounces mini chocolate chips (plus more for garnishing)
  • 1 pint of any brand of ice cream

To make your chipwhiches, you’ll have to start by making your cookie dough. Adjust your oven racks to ensure one is in the middle, and preheat your oven to 350 degrees Fahrenheit.

Next, combine the butter, brown sugar, malted milk powder, salt, and baking soda in the bowl of a stand mixer.

Using a paddle attachment, turn the mixer on a low setting, then gradually increase the speed to medium until the ingredients mix and become light and fluffy. This should take about five minutes. 

Once you get that light and fluffy consistency, scrape the edges of your mixer bowl and then turn down your mixer to a medium-low speed.

Next, add in your flour all at once. Then add the vanilla extract and drizzle in the milk, creating a lovely, soft dough.

Scrape the edges of the mixer bowl once more before turning off your mixer and folding the dough with a spatula to ensure everything is well combined. Then you can stir in the mini chocolate chips. 

Line a sheet pan with parchment paper and prepare to portion your cookies. Using a cookie scoop, divide the cookie dough into two-tablespoon portions and place them on the sheet pan at least two inches apart. 

Next, moisten your fingers with water and gently press down on each portion of cookie dough until they become flat discs about 1/2 inch thick.

Finally, top each cookie with a few extra mini chocolate chips and put them into the oven to bake until each cookie is puffy, lightly golden all over, and still a bit soft. This should take around 18 minutes!

Once your cookies are cooled to room temperature, transfer them to an airtight container and place them in the freezer until you’re ready to assemble your chipwich.

To form your chipwiches, pour an extra portion of mini chocolate chips into a small dish. Portion out your ice cream of choice by cutting it into slices with a cookie cutter or taking it out of its container with a cookie scoop.

Sandwich the portion of ice cream between two of the chocolate chip cookies, then roll the exposed ice cream edges in the dish of mini chocolate chips until you get that classic chipwich coating.

To make sure your chipwich stays intact, freeze it for an additional hour before serving. If you want to set aside a few chipwiches to eat later or share with friends, you can wrap them individually in plastic wrap, return them to an airtight container, and keep them in the freezer for up to one month.

While it may sound like a lot of work, these chipwiches look divine and are sure to impress anyone!
