Butternut Squash Soup Is A Classic, But This Butternut Squash Pasta Recipe Will Blow Your Mind This Fall Season
Butternut squash soup is a staple Autumn comfort food for a reason. The fruit– yes, butternut squash is technically a fruit– has a sweet and nutty flavor that pairs seamlessly with rich cream to give you a warm and decadent meal perfect for any chilly day.
But, butternut squashes and all of their glory do not have to be reserved for just soup. Instead, the fruit can also be used to make an insanely good pasta sauce.
And Jamie Milne, an avid foodie and the mastermind behind @Everything_Delish, recently shared her to-die-for butternut squash pasta recipe.
So, move over soup– it’s time to focus on our new favorite squash meal.
Butternut Squash Pasta With Crispy Mushrooms & Rosemary
Ingredients:
- 1 Box of Pasta of Choice
- 3 Cups of Butternut Squash, Cubed
- 2 Garlic Bulbs
- 1 White Onion, Halved
- 2 Cups of Mushrooms, Sliced
- 1 Cup Pasta Water
- 1 Cup Parmesan Cheese
- 1/3 Cup of Cream
- 1/4 Cup of Rosemary
- 3 Tablespoons of Olive Oil
- Salt & Pepper
You should start by preheating your oven to 425 degrees Fahrenheit– because this recipe is so easy that the prep work will take just a few minutes.

Then, slice the tops off of the garlic bulbs and place them on tin foil.
Drizzle one tablespoon of olive oil and some salt on top of the bulbs before wrapping the tin foil tightly around them.
Next, get out a baking sheet and spread out the cubed butternut squash, mushrooms, and fresh rosemary on top.
Don’t forget to add your tin foil-wrapped garlic bulbs, too!
Finally, top all of the veggies with more olive oil, salt, and pepper, and pop the baking sheet into the oven for thirty-five to forty minutes.
Around the twenty-five-minute mark, you should check to see if the mushrooms are cooked. And if they are, you can just set them aside in a bowl until the squash and garlic are done.
Next, cook your pasta of choice according to the box instructions. But don’t forget to save one cup of pasta water before straining!
Afterward, once the butternut squash, garlic, onion, and rosemary are done roasting, add them all to a blender along with the pasta water, cream, and more salt and pepper. However, do not include the mushrooms!
Finally, blend everything together until smooth, and add your cooked pasta to a pot. Then, you can pour your butternut squash sauce all over the top.
And to garnish, you can top each plate of pasta with the roasted mushrooms, black pepper, and parmesan cheese.
Normally, making pasta sauce from scratch can take hours of standing over the stove.
But, this quick and easy recipe takes the pain out of pasta sauce and delivers a meal you will be craving for weeks.
