This Creamy White Chicken Chili Recipe Was A Fall Staple Her Mom Always Made
The weather is inevitably getting cold, so it’s time to get some even cozier food!
TikToker Mallory Hudson shares a recipe with this perfectly creamy chicken chili she claims her mom makes every fall.
She also claims that it’s her favorite comfort food.
Whenever I hear “mom’s recipe” or “grandma’s recipe,” my eyes always light up. And I have my notes ready.
The list is a little long this time for the ingredients. But the steps are very easy so don’t you worry!
Here are the ingredients you need:
-1/2 sweet onion
-1 tbsp olive oil

-2 tbsp garlic
-14.5 oz chicken broth
-1 can diced green chilis
-Cumin
-Oregano
-Coriander
-Onion powder
-Garlic powder
-Salt and pepper
-Cayenne
-1 ¼ cup corn (drained and chopped)
-1 package of light cream
-Cheese
-Cannellini beans (however much you like)
-2 ½ cups shredded chicken
-1 tbsp lime juice
Phew! Almost 20 ingredients in this dish!
But after prepping, you basically just have to throw everything into your pot and let it simmer. However, there are orders when you put in the food.
First is the olive oil to saute the garlic and onion for four minutes, as Mallory comments. Then pour in the chicken broth and the diced green. You may also put in the seasonings during this step.
Let the whole thing simmer, and you can start preparing the cream. First, cut the light cream into small chunks, then put the cream in the pot along with your diced corn and beans.
“Boil the chicken broth and seasoning mix, then let (the food) simmer for 15 minutes,” Mallory gives her tip again. “(Then) add cheese, beans, and corn. Also, simmer for 15 minutes.”
Next step? Squeeze that lime to get its juice! This is also the step to put in the chicken!
Let the whole thing cook until the chicken is done, and you are good to go!
“You can eat it by itself or with tortilla chips,” Mallory suggests at the end of her video. “It’s so good.”
