If You’re A “Friends” Superfan, You Have To Try The So-Called “Jennifer Aniston Salad” That She Supposedly Ate On Set
If you are a Friends superfan, then you have probably heard the hype surrounding the Jennifer Aniston Salad. The star supposedly ate this salad religiously while on set, and who doesn’t love a good salad (or Jennifer?)
But aside from transporting you to the good ‘ole Friends shoot days, this salad is nothing to scoff at ingredients-wise. It is super quick and easy to make, filling, customizable, and makes a mean meal prep addition. What more could anyone expect from a salad?
If you are like me and screaming, “Nothing!” then we should probably dive into the so-called Jennifer Aniston Salad recipe.
The Jennifer Aniston Salad
Ingredients:
-1 cup of quinoa
-2 cups of water or vegetable or chicken stock
-1/4 cup freshly-squeezed lemon juice
-1/4 cup extra virgin olive oil
-1/2 teaspoon of kosher salt
-1/4 teaspoon of ground black pepper
-1 cup of chopped cucumber
-15 oz. can of chickpeas
-1/3 cup of chopped red onion
-1/2 cup of chopped fresh mint
-1/2 cup of chopped fresh parsley
-1/2 cup of roughly chopped pistachios
-1.2 cup crumbled feta
What makes this salad unique and filling is that it is chock full of quinoa. But, of course, the grain needs to be cooked first.
You should start by placing your quinoa and water (or broth of choice) in a small saucepan. Cover and cook over medium heat until it comes to a boil.
Then, you can turn down the heat to low and allow the quinoa to continue simmering until all of the liquid is absorbed. Finally, remove from the heat and let the quinoa rest while you move on to the next step– making the Jennifer Aniston salad dressing.
For the salad dressing, you should combine the lemon juice, olive oil, salt, and pepper in a small mixing bowl. Then, whisk it together and set aside while you assemble the salad. How simple.
Finally, to assemble the salad, just place your cooked quinoa, chickpeas, cucumber, red onion, pistachios, fresh herbs, and feta cheese in a large salad bowl. Pro tip: fluff the quinoa with a fork right before adding it to the salad bowl for optimal texture.
Now, the last step is the best step. While giving the salad a gentle toss, you can watch as all of the fresh ingredients blend together before doing a little taste test.
If you feel like the salad could use some more seasoning, don’t hold back. Then, divvy up the meal and serve away! This recipe yields four servings in total. So you can share with your family and friends or meal prep for the work week.
