How To Make Dirty Martini Pasta, Which Only Requires 20 Minutes Of Your Time

I’m not sure why it took me 35 years on planet earth until I tried a dirty martini (ok, ok, the legal drinking age is 21, so technically I went 14 years without knowing about it), but I had one for the first time at a wedding last month, and it’s my new favorite drink.

So when I stumbled upon this amazing dirty martini pasta recipe on TikTok over the weekend from Emily Eggers (@emily.eggers), I had to try it, and let me tell you, it’s about to be your go-to pasta dish of the summer.

Oh, and of course any dinner that takes me 20 minutes to whip up is also a win, so that’s another thing to love about this recipe.

“This is like if you took a dirty martini and made it into a pasta. I know I’m not the only one that’s obsessed with dirty martinis, and obsessed with pasta, so I am trusting that this is going to find the right people,” Emily proclaimed in her video.

Emily, you’re a girl after my own heart! Let’s jump right into what you need to make this for dinner tonight!

Ingredients:

  • 5-7 pitted Castelvetrano olives (smash them with the side of your knife before lightly chopping)
  • 1-2 Tablespoons of olive brine
  • 2 Tablespoons of vodka or gin
  • your favorite pasta (I used angel hair)
  • lemon zest
  • 1 minced clove of garlic
  • 1-2 tablespoons of olive oil
  • 1 Tablespoon of butter
  • salt
  • pepper
  • fresh parsley
  • crumbled blue cheese (your choice to include this or not)

Instructions:

  1. Place a pot on the stove over medium heat. Add olive oil and garlic, and stir together. Next, add the olives and lemon zest, and sauté until the garlic is lightly toasted and everything is fragrant. Get out a second pot of boiling water for your pasta and make sure to cook it according to the directions on the box, then drain it.
  2. For your next step, deglaze the pan with your vodka or gin, so you add it to that hot pot and keep stirring until it’s nearly evaporated.
  3. Step three: add the olive brine to the pot and butter. Stir continuously until the butter has melted entirely.
  4. Add your pasta to your pot after it’s been cooked and drained, then combine it with what’s in there. Add in as much pepper and salt as you want, or as Emily advises, “Measure with your heart.” Feel free to add in a bit more olive brine as well before you plate your food. Emily says you can also add a bit of lemon juice if you so choose.
  5. Make sure to serve your dirty martini pasta hot, and you can add lemon zest, crumbled blue cheese, fresh parsley, and olives for garnish.

“This is surprisingly doable too! Very little chopping, easy to find ingredients, love it!” one person exclaimed in the comments section on Emily’s video.

“Respectfully, I’m not the target audience, but the creativity is 10/10!” someone else said.

“I’ve made this three times in the last three days, and I will NOT be stopped. This is knockout,” a third person added.
